I love carrots, but really, how many plain carrots can a girl eat? Actually, given the right circumstances, I could eat a whole lot of them. I decided to make these Italian Parmesan Roasted Carrots to put some of the multitude of carrots in my refrigerator to use. They were so good that I’m looking forward to making them again really soon. To be sure, they have lots of Parmesan cheese in them, but that only makes them that much better. Who doesn’t love a great blend of vegetable and cheese? Not me. I’m all over that for sure.
