You know when you need a really great side dish that tastes seriously amazing? Well, I have it for you right here. This is Green Chile Corn Casserole and it is incredibly good. Seriously. So good. It was inspired by a dish at Thanksgiving dinner and I finally perfected it. It’s packed with flavor and really easy to make. My favorite kind of recipe. It’s easy enough that even the most inexperienced cook can make it. I promise. I’m actually going to the store tomorrow to get the ingredients to make it again.
Now, as the name suggests, this recipe has green chiles in it. I’ve said it before and I will say it again, I love Hatch Green Chiles from New Mexico, where I went to high school. They are just amazing. Those are the chiles I used for this recipe. So amazing. You should try them out sometime. They can be mailed frozen, as I have, or some stores carry them canned. I’ve actually only seen them in the places like Natural Grocers or Sprouts. They are worth the extra effort to find them though.
This recipe will be really great for the upcoming barbecue season. You can whip it up ahead of time and cook it just before your barbecue starts. It’s also just great for lunch, on it’s own. Everyone who tried it loved it, except my super picky husband. He’s a tough one sometimes.
