So this month, I chose to recreate/make Zucchini Pizza Boats from A Saucy Kitchen.

Since you may have noticed I have been absent for a bit here on the blog. Currently, I am super pregnant and honestly this has been one of my roughest pregnancies. I am huge huge huge, uncomfortable, oh AND I have gestational diabetes. Isn’t that a kick in the pants?! But really I can’t think of anything more frustrating as a food blogger than not being able to eat all the things.
But it has given me a great excuse to start trying all these crazy Paleo, Low Carb, Keto recipes that are literally everywhere. And really it has been enlightening and I have learned some great recipes. These Zucchini Pizza Boats are one of those recipes that hit the spot and kept my carbs at a minimum. This is a big deal when you are trying to avoid carbs and still feel full and satiated. And this Momma has been feeling HUNGRY! I mean I have 5 weeks left, I feel like I am starving.
My Version of Zucchini Pizza Boats
This was one of those recipes I did because well I had all the ingredients in my pantry/fridge. I had some cooked mild Italian sausage that needed to be used up. Zucchinis that I bought knowing that they could very well go bad before I actually used them. Really my first thought with zucchini is to sauté it but I really don’t love basic sautéed zucchini. And some havarti cheese that was already sliced so why not throw it in too? And who doesn’t have a can of good spaghetti sauce in the pantry? Well, if not you should.
Since everything was already prepped these took me maybe 15 minutes to assemble. From spooning out the seeds in the zucchini to mixing the filling it was super quick. Then into the oven and ta-da! Zucchini Pizza Boats definitely hit that pizza craving without the carbs. And it was way faster than making homemade pizza. This will be a recipe that stays in rotation at my house even after the baby is born and I can eat normal again. THAT makes this pregnant Momma happy. I love pizza always!
- 3 Zucchinis halved
- 1 Cup Ground Italian Sausage Cooked
- ½ Cup Havarti Cheese Chopped
- 1 Cup Spaghetti or Marinara Sauce
- ½ Cup Shredded Parmesan
- 1 Cup Shredded Mozzarella
- Olive oil to drizzle
- Fresh Basil to garnish (optional)
- Salt and Pepper to taste
- Begin by washing and slicing your zucchini in half.
- Then hollow out the centers to fill.
- Make filling by mixing cooked sausage, havarti cheese, parmesan, and marinara together.
- Fill the zucchini with the mixture.
- Then drizzle with olive oil and salt and pepper.
- Next bake at 350* F for 25 minutes.
- Remove from oven and top with mozzarella cheese.
- Broil on high until cheese is melted.
- Garnish with fresh basil.
