It’s a new year and a new book for the Cake Slice Bakers!

This month’s choices all sounded fabulous. Honestly though how can cake not sound fabulous? I always want to bake several if not all of the options we choose for a month. But this month I wanted to use my bundt cake pan.
Why? Well, cause that poor darling sure doesn’t get used near enough to claim her space in the storage of my kitchen. Because of this I will make sure to use the bundt pan a couple times a year. Mostly, to make myself feel better about keeping her around, taking up space. So bundt cake it is! And my, what a bundt!
Saffron-Orange Bundt Cake
You can tell by the name that this is a full flavored cake. Make no mistake there is absolutely nothing bland about this recipe. Anytime you are infusing something so decadent as saffron it’s going to be something special. Those tiny red strands are so deceiving if you have never cooked with them before. They are incredibly potent and bring such an interesting flavor profile to the stage. When paired with the floral citrus notes of orange this cake just sings.
And it must have smelled just as amazing to my two year old boy. Who could just not resist a little nibble as the caked cooled. Much to my dismay he climbed up to that cake way up high and had himself a little test. Le sigh. As much as I bake and have epic failure I should expect a bake that was so seamless to have some sort of calamity. Needless to say I had to take a “mommy time-out.” I went to my room and shut the door took some deep breaths.
Then my little mouse who nibble nibbled in my house on my fresh bake came in. With head hung and the saddest face ever, he exclaimed, “Cakey, sorry. Sorry, cakey.” Ey yi yi. Game over mommy and forgiven little monster boy. I mean honestly if I wasn’t baking for this post I probably wouldn’t have made it to cooling and glazing it either. The aroma was simply that inviting.
I could continue rave reviews from the ease of baking to the amazing moist texture. This maybe a top 10 favorite cake EVER! I know strong words but I mean them. All of the ideals of cake requirements checked out and I will be baking this Saffron-Orange Bundt Cake again and again.
