Usually I like to bake my cakes for The Cake Slice Bakers a month in advance. Partly because I am excited to eat cake and it’s nice to have my post ready to roll out to all you pretties. Well this month I got behind. We have three birthdays in July and it seems like I go go go all month long. Cooking, party planning, playing in the sun, projects, plus the holidays, I am usually totally partied out by the end of the month. All I want to do is sit by the pool and relax… Maybe in a few more years my kids will also like this concept. Perhaps there is a silver lining to teenagers.
This morning I woke up at 6 am and baked the Raspberry Angel Cake from “World Class Cakes” by Roger Pizey. It’s my 5 year olds birthday party… As I groggily stumbled through baking in my pajamas I realized I was short half a dozen eggs. That is bad. Very bad indeed for an angel food cake. It’s practically all eggs! Then I accidentally put a white in the yolk bowl. Remind me why this novice baker decided to take on this challenge?
July Cake Bake: Raspberry Angel Cake
SO my raspberry angel cake had to be a little gal indeed sans several egg whites. Although I do get pretty excited to whip eggs into peaks now. I find it entirely satisfying to see those egg whites gloss up and pull the beater out to straight standing proud peaks. Odd things make me happy!
Next failure began because… have I mentioned I am not a morning person? Maybe it’s because I am a Leo and they say we like our rest. I also went to bed at 1 am. That means I am not exceptionally functional today. But back to failure 2. Since I don’t really love artificial flavoring and colorants I decided I was going to make and use a reduction puree of raspberries. It’s the same thing right? Well of course it’s not but I decided to do it anyway. Sorry fellow bakers I didn’t go get the exact ingredients. I am trying to follow the rules I promise. Yet the mad scientist in me really is a strong force.
My gambles sometimes work out, this time I know what I would have done different. I would have cooled the reduced raspberry puree before adding it to my batter. It killed my fluffy egg white bubbles. Rude. Also my bad. Aw well I also forgot the vanilla. Darn the luck at this point really. I was lucky to not burn the poor cake in all honesty. Poor little Raspberry Angel Cake. If I could change the name of this bake it would be The Fallen Angel Cake. Funny enough everyone still ate it and the natural flavors were yum. But the texture was only so so. I am not giving you a recipe this month because it’s a comedy of errors. Sometimes you eat the cake anyway. And you like it!
