Did you know March is National Nutrition Month? I think this is fitting in numerous ways. Especially because it’s time for most people to revamp their resolutions from the new year and get back to their goals. My “second life” is as a yoga instructor and by now the busy season at the gym has fizzled. We are back to the normal flow of clientele. But what better way to get back on your fitness goals than by starting to eat those vegetables again? Since everybody will tell you that real results are made in the kitchen let’s start there. What I have learned over the years is that good planning and purchasing the right foods make all the difference. Not because you are on a “diet” but because you enjoy the food you get to eat. I tell people regularly that I am on a nutrition plan. And that plan is to eat the most healthy and nutrient dense foods as often as I can. We eat for fuel and we want the most premium fuel we can get. Even if you eat healthy foods often, you still need direction to keep yourself excited about cooking and experimenting with the food you eat.

Cooking Rainbow Vegetable Lo-Mein from “No Excuses Detox” COOKBOOK
Since I am on a low carb kick trying to shed some stubborn pounds I made the quick and super easy Rainbow Vegetable Lo-Mein recipe. Luckily, the recipe used zucchini spiraled noodles and it actually really gave me that pasta feel. To be totally honest, I enjoyed it more than regular lo-mein noodles because the sauce was kept vibrant, instead of becoming starchy and muddled. If you want to jump on the vegetable noodle train, (I am saying from experience) buy a good vegetable spiralizer. People, myself included, love the “Inspiralized” machine. Since it is a BPA free plastic and it is well made and works beautifully. Skip the hassle of buying a less than awesome machine and go for the good one. We promise you will enjoy your experience making spiraled veggies so much more. Plus, it’s so much fun to make all the vegetables curly!
