InstaPot Chicken and Broccoli Bake
Have you jumped on the InstaPot craze yet? I keep seeing friend’s photos who have them and it sounds like a good thing. Today I’m sharing my InstaPot Chicken and Broccoli Bake with you for this month’s Ultimate Recipe Challenge.
The common ingredient in everyone’s posts is broccoli. It seems that quite a few people don’t like broccoli, but we love it here, so it was a great ingredient for me.
Before I get to the InstaPot Chicken and Broccoli Bake recipe, let me tell you my InstaPot story. It’s kind of funny, at least to me. You might think I’m 2 pops short of a 6 pack though. When we got to Martinique, I wanted to buy a slow cooker. I seriously love a slow cooker because it’s a fix it and forget it type of thing and it doesn’t heat up your house. So important here because it’s so hot. My husband and I looked and looked for one. I even looked online and thought I had found one, but they wouldn’t ship it here. So sad.
One day we were in the store called But (yes, that’s the name, it means ‘goal’ according to Google Translate) and we found this cooker with so many different options. I was sure one was as a slow cooker. Everything was in French though, so I wasn’t sure. It was expensive, at 100 euros, but I bought it and decided it will go with us as we travel to other places after this job.
Super lucky me because when I opened it, the instruction booklet has a section in English! Yay!! I was so happy. However, I found out that it is not a slow cooker. Big bummer. It has tons of options though. Rice cooker, yogurt maker, fryer, steamer, soup cooker and other things. At this same time, my sister was telling me about her new InstaPot and all of the things she can do with it. A lightbulb came on over my head and I realized that I had bought the French version of an InstaPot. So awesome! Now to figure out how to use it.
I’m pretty sure you can make this in a slow cooker, on low, or even just pop it in the oven. We really loved the way it turned out. I was super happy to find the broccoli in the store because it’s not always there. I thought I was going to have to get frozen broccoli. Look at all the great wins with this recipe. I’m on a roll.
To make this recipe, I used my Cream Soup Mix, which takes the place of canned soup. You can find the recipe HERE. It’s super easy to mix up and have extra onhand.
- 4 boneless, skinless chicken breasts, cubed
- 3 cups broccoli florets
- 4 potatoes, peeled and cubed
- 2 portions of my Cream Soup Mix or 2 cans of Cream of Chicken soup and 1 cup milk
- In an InstaPot, mix the chicken, broccoli and potatoes.
- Cook the Cream Soup Mix according to instructions or heat the soup and milk until mixed
- Pour over potato mixture.
- Mix to distribute soup.
- Cook on 'stew' setting for 75 minutes.
