This month’s theme for our Foodie Extravaganza is the donut, so I thought I would combine a favorite with Strawberry Shortcake Donut Tarts. After all, who doesn’t love a good strawberry shortcake? This was my first recipe creation in my new home in Martinique. I had thought I would find pre-made donuts for the base, but couldn’t find any. Then I thought I would just get a donut pan. Again, no luck in finding one. Apparently, they don’t eat donuts here. At least they don’t sell them any place I have looked. So, I had to figure something else out.
I found some cute little tart pans in the store here and decided to try using them for my pans. I wasn’t sure how it would work out to have donut mix in a tart, but it worked out really well. They were easy to work with too. If you have a donut pan, by all means, use that. I think I will get good use out of these pans because my husband doesn’t like cooked fruit, so I can make tiny peach or apple pies and freeze some of them to eat later. Not going to lie, I’m excited about that prospect.
Be sure to butter your pans well so you don’t have to dig the donuts out of the pan. Fill them almost all the way full and allow them to cool completely before cutting them into 3 slices.
- 1 cup all purpose flour
- ¾ cup raw sugar
- ½ tsp baking soda
- 1 tsp lemon juice
- 1 tsp cinnamon
- ¼ tsp salt
- 1 large egg, slightly beaten
- 2 Tbsp melted butter
- 2 tsp pure vanilla extract
- ½ cup milk
- 1 pint whipping cream
- 2 tsp powdered sugar
- 1 pint strawberries, washed and chopped
- Preheat oven to 350°F or 176°C.
- Butter 4 tart pans.
- In a large bowl, mix the flour, sugar, baking soda, cinnamon, and salt.
- In a small bowl, beat the egg slightly.
- Add the butter, vanilla, milk and lemon juice.
- Pour the liquid mixture into the dry mixture and mix until just mixed.
- Spoon mixture into the prepared tart pans.
- Cook for 15 minutes.
- Cool on wire rack for 10 minutes and then remove to a cooking rack to complete cooling.
- In a medium bowl, beat the whipping cream and powdered sugar to soft peaks. Don't over beat.
- When the tarts are cooled, slice them horizontally into three pieces.
- Layer the ingredients bottom of tart, whipping cream, strawberries, repeat two more times.
You can makes these ahead of time and keep in the refrigerator until you are ready to eat them. They are really great. Now, scroll down to see what the other members of our little group have come up with for their donut recipes.
July has arrived and that means it’s time for another #FoodieExtravaganza! Each month we take turns hosting and selecting a foodie holiday associated with that month. Somehow in all the planning July was overlooked so in a mad dash in the second half of June, Lauren of From Gate to Plate told us to celebrate the doughnut. If anyone is keeping score, National Doughnut Day is actually the first Friday in June, but none of us are complaining to be celebrating one of America’s favorite breakfast treats today. July is National Culinary Arts month so let’s just go with that. Also in July: Fried Chicken Day (today, the 6th), Blueberry Muffin Day (the 11th), and Junk Food Day (the 21st).
