I love potatoes, which is a great thing, since we live in Idaho and my husband is a complete meat and potatoes kind of guy, although I am slowly getting him to broaden his horizons. Good thing too because I cannot possibly live on meat and potatoes. However, I love a great potato recipe and am so excited about today’s post. Today is the first month I am participating in the Ultimate Recipe Challenge and today we have a lot of bloggers bringing you potato recipes. Are you as excited as I am? My addition to this challenge is Sausage Potato Breakfast Skillet and it is really yummy and easy too.

If you are a regular reader of Fearlessly Creative Mammas, then you know I’ve been recovering from knee surgery. I have spent a lot of time on my behind and quite frankly, I’m a little tired of it. I decided I had to get up and make something in the kitchen, but it couldn’t be too time consuming, so I made this really great dish for breakfast. It was simple, but perfect for what I wanted. It didn’t take too long, so I was able to do it on my own, with a little hopping along the way.
When we lived in China, my friend Echo had this huge skillet/wok type of thing that nothing stuck to. I mean nothing at all. I asked her where she got it and she told me she ordered it from a place in Korea. I ordered 3 of them and they are my very favorite pans. Seriously, nothing sticks to them. So, make this dish is something similar for ease of preparation and clean up.
- 1 cup sausage
- 2 Tbsp butter
- 2 potatoes, peeled and diced
- ½ cup onion, diced
- ½ cup sweet peppers, diced
- 4 eggs, beaten with 2 Tbsp water
- 1 cup shredded cheddar cheese
- In a large skillet, cook sausage until crumbled and cooked through.
- Melt butter in skillet.
- Cook potatoes in skillet until cooked through.
- Add onion and cook until translucent.
- Add sweet peppers and cook just until warm.
- Add eggs and cook, stirring to scramble eggs.
- Garnish with cheese.
I had a lot of leftovers when I made this, because I was home alone. I decided to make some Breakfast Burritos out of the leftovers for a quick, easy breakfast. This will be really great since I will probably be gimpy for awhile still.
