Spring is here!! Yippie! You knew that was coming, right? I’m all sorts of excited. With Spring comes playing and working outside, going on picnics, camping, hiking, going to the beach, if you are lucky enough to live by one and ball games of all sorts. I am not a huge cold sandwich lover. Especially where we live because it is so dry here that the bread dries out while you are eating your sandwich. It’s a bummer. One of the things I love to take when we go on picnics or long car trips or to Yellowstone is chicken. I love that you can eat chicken cold and it tastes just as good as when you made it. This Cheesy Baked Chicken is one of the ways you can make it ahead and still enjoy it when you eat it later.
Let me tell you a little about this particular chicken recipe. Because of the way it’s made, it locks in the moisture and flavor. Plus, I get my chicken at Zaycon Fresh and their chicken is amazing. This particular chicken has a nice crunch to it, without frying it for a long time, so you are experiencing the chickens moisture and flavor and not that of grease.
