I don’t mind telling you that I have made the perfect cupcake. Seriously. They are so good that even my husband loves them. That is saying a lot too because he is not a cake eater. My regular taste testers said they are one of the best things I have come up with to date. I thought about what cocktail would make a great cupcake and settled on the Pina Colada and made these Pina Colada Cupcakes. Oh my, I am so happy that I did.
I should tell you here that I don’t actually drink alcohol. However, I do love a great alcohol-free Pina Colada, especially when I’m in some tropical location. Oh to be in a tropical location right now. The sun. The warm air. The clean breeze. I see that in my future. Relaxing on the beach, a nice warm breeze through my hair, drinking my Pina Colada with my hubby by my side. Ah, the good life. For now, I will have to invoke dreams with these amazing cupcakes.
When my husband and I went to Belize in 2012, we had these amazing alcohol-free Pina Coladas at a bar on the beach. We stayed on a really skinny island, so most things were on the beach. We have recreated these several times since then and while they are really good, having them on a beach, when you are warm and toasty, is much better than having them when it’s -10 outside.
When I was thinking about how to make these cupcakes, I decided to start with a boxed cake mix, which is not something I usually do. However, I had purchased the Pillsbury Simply cake mixes to try and thought this would be a great place to try them. Turns out, I was right. It was the perfect place. I’m pretty much in love with these cupcakes. Can you tell?
I have loads of cupcake wrappers, but I decide to use my silicone wrappers because they come off the cupcake really well. I use them most of the time because then I don’t have to fight the paper wrappers. Have you tried them before? They really are great.
- 1 box Yellow Cake Mix
- ⅔ cup 100% Pure Juice Pineapple Juice
- 1 cup butter, softened and divided
- ⅔ cup + ¼ cup, milk divided
- 3 eggs
- 1 cup coconut, divided
- ¼ tsp Loranne Coconut Extract - if you use a different brand, use 1 tsp.
- 4 cups powdered sugar
- ½ cup toasted coconut
- Preheat oven to 350*.
- In a mixing bowl, mix ½ cup butter and eggs.
- Add in cake mix and mix well.
- Add in ⅔ cup milk, continuing to mix well.
- Add ½ cup coconut and mix to incorporate.
- Divide between 24 cupcakes.
- Bake at 350* for 20-22 mins, until cupcakes are cooked through.
- Remove from oven and cool completely.
- When the cupcakes are cool, mix the frosting.
- Mix ½ cup butter, coconut extract and 2 cups powdered sugar on LOW speed.
- Add in 1 more cup of powdered sugar and continue to mix.
- Add in ¼ cup milk and last cup of powdered sugar and mix well.
- Add in ½ cup coconut and mix to incorporate.
- Frost the cooled cupcakes and sprinkle with toasted coconut.
- Store in an airtight container.
