This is my third Christmas blogging on Fearlessly Creative Mammas. Holy Cow! I can’t believe it. That is just crazy talk. My first year blogging, I found this thing called The Great Food Bloggers Cookie Swap, to benefit Cookies for Kids Cancer. The premise is easy, food bloggers sign up, donate a little bit of money, sponsors pitch in some more money, bloggers are matched up with three blogger names, we make cookies and send them to our matches and then we share the recipe with our readers and link up to a giant party so we can all see all of the great recipes. All of the money goes to Cookies for Kids Cancer, which is an awesome charity for sure. This year, I came up with these Cinnamon Pumpkin Oatmeal Cookies to share with my matches. It took a few tries, but I got them just the way I wanted and they passed my taste testers muster, so they were good to go.

As I said above, it took me a few tries to get these cookies exactly right. First, they were too dry. Then they didn’t have enough flavor and then, I got them exactly right. Whoo Hoo! It doesn’t normally take me three tries to make a great cookie, but this time, it did. They are yummy though.
This year there are 475 bloggers participating in the swap. That’s a whole lot of cookies! Seriously. The lovely ladies from The Little Kitchen and Love and Olive Oil put this whole swap together and I’m certain it was a lot of work! I’m happy I found this though. It’s fun to see what other bloggers come up with for their recipes.
- 1 cup butter, softened
- ½ cup sugar
- 1 cup brown sugar
- 1 egg
- 2 cups pumpkin puree, not pumpkin pie mix
- ½ tsp baking soda
- 1 tsp salt
- 2 tsp vanilla
- 2 ½ tsp pumpkin pie spice
- 1 cup flour
- ¾ cup oat flour (make by blending oats to a powder)
- 3 cups oats (old fashioned, not quick)
- 12 ounces cinnamon chips
- Preheat oven to 350* F.
- In a mixing bowl, mix butter and sugars.
- Add in egg and pumpkin. Mix well.
- Add in baking soda, salt, vanilla and pumpkin pie spice. Mix well.
- Add in flour and oat flour and mix well.
- Add in oats and mix well.
- Add in cinnamon chips and lightly mix.
- Place on ungreased cookies sheet by rounded tablespoon full, about 2 inches apart.
- Squish the cookie down a little with the back of your spoon.
- Bake for 13 minutes.
- Cool on a wire rack.
