I’ve said before, but in case you don’t remember or know, I went to high school in Albuquerque, New Mexico. One of the many things about Albuquerque I fell in love with was the incredible food. It’s not like the food anywhere. Seriously. So good. While I was there, I developed a love of green chile. I think it runs through people’s veins there. The very best green chile is grown in this little town called Hatch. Well, the green chiles are in right now and I just got my order in the mail! (I put a picture on Instagram because I was so excited!) I decided I would come up with a really healthy Green Chile Beef Stew and guess what? It is stinkin’ amazing.
One of the things I love about being a blogger, besides all of the wonderful people I get to meet, is being able to write to a company and sometimes trade something I want for a mention on my blog. I got the mild variety because my stomach doesn’t handle hot like it used to, but they have lots of varieties and they ship it right to your door. So awesome!!
You might know that I am a Beach Body coach and try to eat healthy most of the time. Well, I tried to eat healthy before, but now I’m focused on it even more. I was participating in a 5 day clean eating challenge and while I loved all of the recipes, one stood out to me. That is the inspiration for this recipe and while this one is similar, it’s not the same. Because this is a healthy recipe, be sure to use lean ground beef. Mine is from Zaycon Fresh and is 93% fat free. If you don’t know about Zaycon Fresh meat, you should check them out because you can save some really great money and get amazing quality meats. - 1 lb. lean ground beef (I use Zaycon Fresh)
- 1 white onion, chopped
- 1 cup chopped celery
- 1 cup chopped carrots
- 28 ounces diced tomatoes
- 32 ounces vegetable broth (I use either Swanson or homemade)
- 3 cups chopped red potatoes, with skin on
- ½ - 1 cup chopped roasted green chile
- 2 cups water
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tsp basil
- 1 yellow bell pepper, chopped
- In a stew pot, brown the ground beef, onion and celery until the beef is cooked through.
- If there is any grease, drain it off.
- Add the carrots, tomatoes, vegetable broth, potatoes, green chile, water and spices.
- Simmer about 30 minutes, until the potatoes and carrots are fork tender.
- Add the bell pepper and cook for 10 minutes more.
- Serve hot.
This is seriously so great. My husband is pretty picky and he likes it a whole lot. Try it out for yourself and see. This can be frozen if you want to make it ahead or have left overs. What is your favorite healthy meal? Leave me a comment below and let me know.
