It seems like every time I turn around, I’m hearing that something I thought was healthy isn’t for some reason or another. Tell me I’m not alone. You know just what I’m saying, right? Remember when eggs were healthy and then they weren’t? Now we’re finding out they are again. For a long time people thought diet soda was better than regular soda and now we’re finding out that isn’t the case at all. It’s all so stinkin’ confusing. My husband and I came up with this recipe when we were camping in Alaska, although I’ve added a few veggies to it. It’s super easy and so tasty, plus healthy. I’m calling it Healthy Beef and Veggies. I hope you will love it.
I’ve done a lot of reading on healthy eating the past few years. I mean a LOT. I’m pretty sure it makes my poor husband crazy because we don’t have the same things in the house anymore and sometimes he isn’t too happy about that at all. Really. I’m not totally mean, there is still chocolate in the house. However, I don’t buy soda pop, white bread or boxed meals anymore. Poor guy.
When we moved to China, my choices were limited, so I had to go to the basics. The more I thought about it and the more we ate the basics, the more I discovered that really, that is how we should be eating. Think about the way the people ate back 50 years ago. You know, before there were so many processed foods with crazy additives you can’t pronounce. Even in our fresh meat there are additives to make it grow faster and bigger. So crazy!
About 5 weeks ago I started participating in a Beach Body Challenge because one of my great friends is a coach and she asked me to do it and I love her, so I did. Then I actually started enjoying the exercise, which is so not my normal thing. There was also the food plan, which is portion controlled based and tells you some things you shouldn’t eat. It really made me feel better, so I signed up to be a coach too. My goal over the next year is to get stronger so I can be of more help to my husband when we are working in Alaska again next summer and to help others get healthy and stronger. So, I’m on this healthy path that sometimes makes my hubby crazy. One of the things I’ve been looking at is alternate places to buy meat to ensure I’m getting great quality meat, but not paying a fortune. There is organic, antibiotic free meat in the grocery store, but it’s so expensive. Through a friend I discovered Zaycon Fresh. (referral link) I told you about their chicken in this post for Brined Chicken, but this time I tried their ground beef. It’s really tasty and healthy. The beef is 93% lean 7% fat. That is what I used for this recipe. My freezer is stocked with this fantastic ground beef. The other great thing about Zaycon Fresh is that it costs less than the grocery store per pound! Saving money is so awesome.
This recipe is so good that I make it often. I serve it over whole wheat pasta, but it would be good over brown rice or just plain too. You can adjust the veggies if you want, but this combination is really good.
- 1 pound very lean ground beef (93/7)
- 1 onion, chopped
- 1 cup celery, chopped
- 1 cup mixed color bell pepper, chopped
- 1½ tsp onion powder
- 1½ tsp garlic powder
- 1 tsp pepper
- salt to taste
- In a large skillet, saute the ground beef, onion and celery until the vegetables are tender and ground beef is cooked through.
- While this is cooking, add in the spices.
- When the beef is cooked through, add in the peppers.
- Cook until the peppers are tender.
- Serve over pasta, rice or plain.
