Is it hot where you live? June is usually a really nice month here in Southeast Idaho, but this year it is crazy hot. I can’t ever remember a time when it hit the high 90’s here in June. This year we have had 2 or 3 weeks of 90 degree weather with at least the next 10 days forecast to be the same. Holy smoke!! I remember wearing a heavy jacket in June. The month of July has ice cream as one of the national holidays, so I was super happy when that is what was chosen as our focus for Foodie Extravaganza this month! I came up with this really incredible No Churn Mint Chocolate Chip Ice Cream for my submission.
Here’s the thing about this ice cream. It is really easy to make and wow is it good. It’s so good that even my seriously picky husband loves it and asked me to make it again! Whoo Hoo but I love it when that happens! I hope you will make it again and again!
- 32 oz whipping cream
- 2 14 oz cans sweetened condensed milk
- 2 tsp pure vanilla extract
- ½ tsp mint chocolate chip extract (I use Loranne's)
- 2 cups Andes Cream de Menthe chips
- In a large mixing bowl, beat the whipping cream until soft peaks form.
- In a separate bowl, mix the sweetened condensed milk, vanilla and mint extract.
- When the whipping cream is finished, mix in the condensed milk mixture by hand and mix well.
- Add in the Andes chips and mix well.
- Pour into a 9 x 13 inch pan or container.
- Freeze for 24 hours.
- Allow to sit out for 10 minutes before scooping.
