Life has been crazy lately. I have a habit of biting off more than I can effectively chew. Things fall by the wayside and generally they are things that have value to me. Sad, right? I think the saying, “Idle hands are the Devil’s workshop” is true, to a point. I also think we need to have idle time to just be. To regroup. To listen to inspiration. To rest. To think. I haven’t had much of that lately and I need to make some changes.
My husband and I are currently moving from an apartment back into our home. While our apartment is a nice apartment, it isn’t very big. As I’m packing up boxes, I wonder how it all fit without looking like a disaster all the time. I have too much stuff, plain and simple. It won’t look like that when I get it all in a bigger space, but it doesn’t mean it isn’t so. I need to downsize my stuff. (If my husband is reading this, he is probably doing a happy dance right about now.)
Simplification is what I want to bring into my life. Some organization of my time is also in order. This is my last week at my job, which will free up some time. Yay! However, I have to figure out how to manage my time so I can keep up with the things that are important to me, like this blog and my Macaroni Kid business and still have time to just be. Of course there are the normal day to day things we must all do, cooking, cleaning, etc., but I think for me, in order to have that time, I will have to plan it in.
One of the things that I forget to do, on a somewhat regular basis, is eat breakfast. Do you ever forget to do that? I get busy doing whatever is on my list each day and before I know it, I have a stomach ache because I haven’t eaten. Sad but true. I decided I wanted to come up with something somewhat healthy that I could just grab on the run. I hope you will like this recipe. It isn’t very sweet and because it’s made with honey instead of regular sugar, it’s a little bit more dense than a regular muffin. However, it’s pretty tasty.
- ⅓ cup butter, melted
- ¾ cup honey
- 2 eggs
- 2 tsp baking powder
- ½ tsp salt
- 2 Tbsp cinnamon
- 2½ cup whole wheat flour
- ¾ cup milk
- 2 cups peeled and chopped apples
- 1 cup chopped pecans
- In a large mixing bowl, mix butter, honey and eggs.
- Add in baking powder, salt and cinnamon.
- Add in flour and milk.
- Mix well.
- Add in apples and pecans.
- Grease a muffin pan very well.
- Fill muffin cups to the top.
- Bake at 350* for 22 minutes.
- Cool on wire rack for 2 minutes.
- Remove muffins from pan.
- Eat warm.
- After the muffins are cool, store in airtight container.
