How do you feel about avocados? It seems like either you love them or you hate them. I happen to really love them, but they are so expensive. I have no solution for them being expensive, but I came up with a really yummy recipe for them, so get ready for goodness.
Something about avocados in Idaho that is kind of a bummer is that they are so small, about the size of a pear. When I was a kid I lived in Hawaii and we had an avocado tree in our yard. Those avocados were literally the size of a cantaloupe. No exaggeration at all. Chime in if you know what I’m talking about. The irony is that when they were free, I didn’t like them and had no idea what to do with them. Now I want to always have them and they are kind of pricey.
I bought some the other day and wouldn’t you know, they all got ripe at the same time. Figures, right? I decided to do something with one for lunch the other day and I was so happy with the way it turned out that I will be making it again and again. I used sausage in my recipe and might I suggest making your own sausage so you know exactly what is in your sausage. If you don’t have a good recipe, you can use mine, which you can get on this post.
If you scoop the avocado meat out of the shell carefully, you can stuff the avocado and they make a nice little appetizer or salad for entertaining. Great for the upcoming Super Bowl!
Makes 1 whole stuffed avocado
1/4 cup chopped bell pepper, red, yellow and orange
1/4 cup cooked and crumbled sausage
1 Roma tomato, chopped
2 Tbsp shredded cheddar cheese
black pepper to taste
Cut an avocado in half, lengthwise and carefully scoop the meat out. Save the skins.
Chop the avocado into small chunks and place in a bowl.
Add the chopped bell peppers, cooked sausage, chopped tomato and shredded cheese and mix well.
Scoop all of the mix into the two avocado shells.
Lightly sprinkle with black pepper.
