Seems easy enough. Right? Well, I don’t happen to love waffles. They are just too sweet for me. I know, I love chocolate, so how can this be. Well, I don’t eat chocolate for breakfast. When my kids were young they liked Eggo Waffles and if I had one, it was always just toasted and with no syrup or butter.
So, I thought about what I could do with the waffles and I decided to go the savory route. I really wanted them to be great, not just so-so and I came up with a winner!! First, I had to borrow a waffle iron. After making these, I may buy one myself. I wonder how much they cost. Hum…
There is no sugar in these waffles, so that is a plus if you are watching your sugar intake. This recipe made four big waffles. I ate one and the rest I cooled off and then froze, with a piece of parchment paper between each waffle. I figure I can heat one up in the oven for a quick lunch. I also added a dollop of sour cream and that made it even yummier. If you’re reading this from Estonia, you’re even luckier because Estonia has the best sour cream of all the sour cream I’ve eaten. Seriously. It’s called ‘hapukoor’ for the rest of you. So amazing. Anyway, I digress. Continue reading below for the recipe.
Savory Bacon and Veggie Waffle
Makes 4 large waffles
1 cup milk
2 Tbsp vegetable oil
1 cup flour
3 tsp baking powder
1/4 tsp salt
2 green onions, chopped small
3 pieces of bacon, cooked crisp and chopped
1/4 cup chopped bell peppers, red, orange and yellow
1/2 cup shredded cheddar cheese
In a medium bowl, beat the egg well.
Add in the milk and vegetable oil and mix well.
Add the flour, baking powder and salt and mix well.
Add the onions, bacon, peppers and cheese and mix well.
Cook on a well greased waffle iron until cooked through and a little crisp. I cooked mine about a minute after the ‘ready’ light came on. Serve with sour cream.
