Every once in a great while I actually eat something healthy. I know shocking, right?! I have been trying to get more protein and veggies into my diet. This is super yummy and perfect for those on the go lunches!
I just mix up everything in a bowl, you can also use tuna instead of chicken! It has the super food avocados, which I am starting to love!! Since my days are so super jam packed with work, kids, blogging, etc. I love this lunch. It’s so quick, healthy, and delicious!! Try it out and let me know what you think!!
Avocado Chicken Salad
1 small can chicken
2 stalks celery, sliced
1 Tbsp mayo
Salt and pepper
Put the chicken in a bowl. Add in mayo and avocado and mix well. Add in celery, mix well. Add salt and pepper to taste. Serve on bread, toast, crackers, or just grab a fork and eat it by itself.
