I found this amazing new coffee at Winco the other day. It probably isn’t really new, but it’s new to me, and it is cheaper than the coffee I usually buy, so that is a plus! It is a light roast, which means not so strong and doesn’t have that bitter taste that some coffees do, I think I’m in love!
This drink was super easy to make and only took me a few minutes. Ahead of time I toasted a bag of coconut. If you don’t know how to toast coconut check out my COCONUT POUNDCAKE recipe for instructions, and a great new recipe 🙂 While I was toasting my coconut I made some coffee, then let it cool down to room temperature, or you can put it in the fridge.
In a blender I combined coconut flavoring, creamer, caramel, toasted coconut, and coffee, then blended well.
After it was all mixed together I took a glass and decorated the inside of it with more caramel, and added ice. Then I poured my coffee over the ice and topped with whipped cream and caramel, then sprinkled more toasted coconut on top.
This coffee is my new best friend! Also, didn’t cost me as much as it would at a coffee shop! I love going to the coffee shops, but just don’t have a budget for it, so this is my way of having my coffee and drinking it too 🙂 I hope you will try it out and enjoy it as much as I do!
Toasted Coconut Caramel Iced Coffee makes 3 large glasses
6 cups of your favorite coffee
2 Tbsp. Coffee creamer (I used caramel macchiato)
1/3 cup toasted coconut, and extra for garnish
1 tsp. coconut flavoring
2 Tbsp. Caramel topping, and extra for garnish
Blend together coffee, coconut, caramel, coconut flavoring, and creamer. Serve over ice. Top with whipped cream, coconut, and caramel.
