These nachos are one of the most requested meals of the entire family!!! They are something for everyone, spicy, saucy, yummy goodness! They do take more time then some of my other recipes that I have posted before, but oh so worth it!
You first want to start with chips. We make homemade chips using wonton wrappers from the produce section. They are cut in half like triangles and fried, we like to use peanut oil.
When you take them out of the fryer they will be greasy so I lay them on a cookie sheet on top of paper towels. Don’t they look great?!
Once all of the chips are made I turn my oven on 200*. While that’s heating up I start to sauté the chicken. Start with some virgin olive oil, add the chicken once it’s hot and add in some roasted garlic and herb seasoning.
At the same time the chicken is cooking make some Alfredo sauce.
Once everything is prepared I put some chips in these foil containers and top them with mozzarella and pepper jack cheese. Then put them in the oven until the cheese is melted, about 10 minutes. These foil plates I found at Walmart for 93 cents for a 3 pack, comes with lids, and makes for a great way to heat up the cheese and makes for an easy clean up.
When you pull it out of the oven pour some Alfredo sauce over the top of it, and add your chicken. Then top it with whatever sounds good. We like to use jalepenios, olives, lettuce, rotel tomatoes with green chilies, or salsa. I have also found that the jalepenios are better to me if you put them in the oven with the chips.
I know this picture shows these nachos on a plate instead of a foil pan. Would you believe that it took us atleast four tries of making these nachos to get all of the pictures taken? I just get so caught up when I’m cooking I forget to take pictures. I hope you will try out these nachos and enjoy them as much as we do!
