I am forever needing to get something fast for lunch, well really any meal. With three kids it’s hard to find time to do anything for myself, especially eat. This recipe is quick and somewhat healthy, which is a plus! And only 5 ingredients, another plus!
First, boil some water, easy enough, and cook the pasta. While the pasta is cooking, heat up the olive oil in a little frying pan. When it is hot add in the garlic, the recipe calls for 2-3 cloves of garlic, but I liked the jar of minced garlic you can get in the produce aisle. Mostly because I’m lazy, but also because it doesn’t go bad as quick. Once the garlic is cooked mostly and looks almost see through, add the peas. I added extra cause I love peas but also to get an extra serving of veggies.
By the time my pasta was cooked the peas and garlic were cooked as well, so about 15 minutes I would say. Drain the pasta, then add the peas to it. Stir it up and add some Parmesan cheese to it and stir to coat. After I had it mixed up I poured more cheese on top, cause lets face it, cheese is awesome!!! Enjoy!!!
