Just a quick warning; this is not healthy at all!! And it’s totally worth it!!!
This was my quick lunch on Saturday and my comfort food for the day. First I took a potato and poked holes in it with a fork then put it in the microwave for 8 minutes. While that cooked I turned the oven onto 450*. When the potato was done in the microwave I put it in some foil with a little bit of olive oil, kosher salt, and some pepper. I wrapped it all up and continued cooking it for about 12 minutes. Then I topped it with cheese first so it could melt, and surrounded the edges with BBQ sauce, yes BBQ sauce. Trust me, you will be presently surprised. I then drizzled a little ranch right down the middle and sprinkled bacon bits and parsley on top. I think green onion would be really good too, but I didn’t have any. It was so delusions I even ate the skin!!
