On a snowy Idaho day in April, I was grumpy because it was snowing and I just wanted warm weather. Warm weather in April, is that too much to ask? I think it is where I live and it makes me unhappy sometimes. I decided to try to recreate a summertime smoothie using frozen fruits. It turned out pretty well too and even perked me up a little bit.
I always add a little chia to my smoothies, to add some Omega 3 and fiber. I know you can get Omega 3 from fish, but I don’t happen to like fish, so I get it in my chia seeds. There are loads of other great benefits of the chia seed, so they are also good to add to cookies and breads or just sprinkled on a salad. There are lot of websites that tout the benefits of chia and even books. You should investigate for yourself if you are missing something in your diet, like me.

|Dairy Free Smoothie
1 can of Natural Coconut Milk – Chilled
Shake the coconut milk really well and dump it in the blender with the other ingredients, except the ice. Blend it until it is smooth. Add ice to keep it cool and blend to break the ice up. Pour it in a glass and drink it up. So good and you are getting some of your servings of fruit for the day!
