These little devils are perfect for leftover Easter eggs!!!
All you need is a dozen eggs, an avocado, 1 can of rotel tomatoes with green chilies and lime juice, a little extra lime juice, and a pinch of salt to make guacamole deviled eggs.
First take your eggs and hard boil them. Here’s a tip: if you put a tsp of salt or baking soda in the water while the eggs are cooking it prevents them from cracking and makes them easier to peel! Once you have the eggs cooked and peeled, cut them in half and put the yolks in a bowl with the avocado.
Mash the yolks and avocado with a fork and mix it up well. Add the rotel a little at a time till its how you like it, I used about 3/4 of the can.
Add in extra lime juice and salt till its how you like it.
Then scoop into the eggs and they are ready!
Next time I make these I think I will add in some Mexican corn and a little cilantro. I think that will perfect it. I hope you enjoy these as much as everyone else did!!
