Pumpkin Oatmeal Muffins!!!
These muffins were really yummy and soft. I’ve been on an oatmeal kick lately so that’s why I decided to try these out, plus they sounded pretty amazing!
First set your oven to 375*.
Combine all of the ingredients in large bowl or mixer. This recipe called for canola oil, but I used vegetable oil instead. And after taking this picture I realized that I needed the smaller can of pumpkin instead of the larger, and possibly not expired by two years!
After everything is combined you’re supposed to add nuts, however I have young kids and decided not to use nuts. Instead I added chocolate chips to half of the muffins.
Fill up muffin cups about 3/4 of the way full, I spray mine first with cooking spray, then put in the oven for 18 minutes!!!
Cool either on a rack or in the pan, if you can wait that long!!!! Then scarf those suckers down!
